Smile Bananas - How to cook with it?

Bananas is a healthy fruit. You can eat is as it is when ripe or make a nice snack or dessert out of it. If you have too many bananas why not make something? You can try out this popular Malaysian banana fritters. It tastes real good. It's very simple and easy to make. All you need is:

3 ripe bananas (peel and mash)
3/4 C self-raising flour
1/2 C coconut, nuts or raisins
2 T sugar

Mix all together. Scoop and fry in hot oil. It goes very well with ice-cream or tea.

Thanks for the suggestion. Never thought of that. I have a bottle of coconut oil. Will do that the next time I make the banana fritters.

Malaysian banana fritters?

My deceased maternal grandmother used to make banana fritters and she had NO connection whatsoever with Malaysia. My mother is 87 years old.

The sugar should be optional as most ripe bananas are very sweet. Coconot oil is ideal for frying/cooking. Poor West Indians know this.

I hope someone will add more banana recipes. It may have the same name but cooked or baked in different ways and with different ingredients. In Malaysia, sometimes we fry it in small balls and push a satay stick through it. Some people fry it in big balls like the size of your wrist. Frying with coconut is definitely a great idea but I find getting it here in UK is a little difficult unless I order it online. So I used olive oil to fry it.

when I was in high school, I remember going to this real fancy spanish restaraunt... they made a banana dessert... seemed to just be bananas sliced long wise, and then fried, with a sweet cream sauce poured over it... was the best dessert I have ever had... wish i could find a recipe for it


Quick reminder tho... mosquitoes love the smell your body makes after you eat bananas... might want to save all that banana cooking for the winter time!!!!

Thanks for that idea about cooking bananas. It sounds great. I made banana spring rolls yesterday. Just wrap sliced bananas in spring rolls wrappers, deep fry it and serve with ice-cream. It tasted so good....crunchy and sweet. The sweetness comes from the bananas.

I made strawberry coulis yesterday and ate it with bananas. I just thought it tastes fabulous....a beautiful combination of sourness and sweetness on top of the lovely colours. So easy to make and healthy too.

Lightbulb Fritters?

Banana recipe sounds great Shalinee, but I don't want to use a white
self-rising flour. Actually, i found a good sounding fritter recipe but it
calls for self-rising flour too. Does anyone know how to turn a bran
flour recipe into self-rising? Would adding baking soda/salt or baking
powder make a different flour work okay?

I believe you can. Sometimes when I don't have the self-raising flour, I just add 1 tsp baking powder to 1 cup of flour. Sometimes I use spelt flour to make this banana cake for a healthier version. I love to experiment. You can try and let me know.

I like to use date 'sugar'. It is just powdered dates with ground up oatmeal in it so it will sprinkle like sugar. It would be a great addition to the banana fritters and you wouldn't have to use white sugar.

It's delicious. I buy it at our health food store. You can butter toast and sprinkle on a spoonful for sweetener. I make banana bread and sprinkle the date sugar on top of the batter and that and the bananas is all the sweetener I need. It can be used so many ways. It's great in smoothies.
