Red face Bran Muffin Recipe Needed

Does anyone have a good recipe for Bran Muffins? Also, I have some dates that I need to use before they expire.
Thanks for any suggestions on this.

Best Bran Muffins ( from Fiber & Bran Better Health Cookbook )

Yield: 12 muffins

1 1/2 cups wheat bran cereal
1 cup milk
1 egg
1/3 cup soft shortening
1 1/2 cups sifted flour
1/2 cup sugar
3 tsp. baking powder
1 tsp. salt

Preheat oven to 400 degrees F.

Combine the bran cereal and milk in a mixing bowl. Let stand 2 minutes, or until most of the moisture is absorbed.
Add the egg and shortening. Beat until well blended.
Sift together the flour, sugar, baking powder and salt.
Add dry ingredients to the cereal mixture and stir just until all are moistened.
Spoon the batter into oiled muffin cps (3/4 full) and bake 25 minutes, or until lightly browned. Serve hot.

Date Delights (from same cookbook)

1/2 cup butter
1/3 cup honey
2 cups chopped dates
2 cups granola
2 cups finely chopped nuts or grated unsweetened coconut for coating

Melt the butter in saucepan over low heat.
Add honey & dates and cook, stirring constantly, until the dates are very soft.
Remove from heat and stir in the granola.
Spread the chopped nuts or coconut on waxed paper.
When the mixture is cool enough to handle, shape into small balls and roll them in the coating.
Store in refrigerator, between sheets of waxed paper.

Thanks Kind2. The recipe i ended up using is very similar to your muffin recipe, but
uses whole wheat flour instead of white flour. I didn't want to use any white flour
at all. I found it on the TV Food Network site. The one suggested uses figs instead
of dates so I just substituted. I already had the unsulfured molasses and other ingredients.
They turned out well and really taste good.

Found this in my recipe box and I have no idea who to give credit to for the recipe.lol They are very good & are gluten free.


1/2 c almond flour (blanched)
1/2 c flax meal
1/2 tsp sea salt
1 tsp baking soda
1/4 cup water
3 eggs
2 tablespoons olive oil
6 dates
1/2 cup raisins
1/4 cup sesame seeds
1/4 cup sunflower seeds

Combine almond flour, flax meal, salt, baking soda in a large bowl
In a food processor on high blend water, eggs, olive oil, dates until smooth
Combine wet & dry ingredients
Add raisens, sesame & sunflower seeds
Use lined muffin pan
350 degrees for 20 to 25 mins
