Although I agree with the article they have missed a very important part. That gluten destroys the ability of the small intestine to absorb minerals, vitamins, amino acids, fatty acids, and cholesterol which is a large molecule. By the photo of this person you can see he has a copper deficiency and probably deficiencies in a lot of essential nutriments.
It might have been the ability of the body to get what it needed after the damage of the gluten went away.

They call it leaky gut syndrome. When food starts to leek out of the intestines and spill onto inner organs causing bacterial infections. I just emphasized that a little but really thats what gluten can do to you. Also, I notice how bad your sugar craving get when you eat bread.
