Default Cod with tomatoes and potatoes

Hi, here's a quick&easy recipe I make every time I crave fish but I don't feel like spending hours behind the stove. It comes from the website where I got my mediterranean diet from (Italiandiet.com) � you can find pretty good italian recipes there if you like the mediterranean style cooking � but I gave it a personal touch by adding a sprinkle of oregano and a handful of preserved with salt capers: they bring to fish a more intense mediterranean flavor!

Ingredients (for 4 people):


600 grams (21 oz) cod
400 grams (15 oz) potatoes
200 grams (7 oz) chopped tomatoes
olives
� onion
pepper
parsley
sage
rosemary
olive oil
salt

Directions:

Peel and cut potatoes into medium sized cubes or into thin slices. Coarsely chop onions and add to potatoes in a deep nonstick pan over medium heat. Add sage, rosemary, olive oil and a cup of water and cook for 15 minutes, stirring often. Add chopped tomatoes and a pinch of salt and fresh pepper and let cook for an additional 20 minutes. Add cod fillets to the sauce and let simmer for 10 minutes, turning the cod two or three times to maximize absorption of the sauce. Turn off heat, sprinkle with parsley and serve.

I'm actually in the fish industry, know anything about cod worms? They aren't too nice I tell you.

The recipe sounds good Angelina, except I'd probably leave out Sage.

Yikes! No, never heard of Cod 'worms'; what are they? Cod is one of my
favorite fish to eat - if it's ocean caught and not farm raised.
How does one know if a Cod has these worms, jw8725?

Hi there, Cod is infested with parasitic worms. Have a google, I really dont want to post up pics, I find these wiggly things disgusting and grotesque. Ok so cooking the fish kills them and their zillions of eggs but no thanks, I'd rather not eat parasitic worms.

I've had a lot of personal experience with these worms, I no longer deal or handle Cod. As for those Birdseye cod fish fingers, if you ever buy them and fry them, open them up, those grey strings are the nasties.

eww cod worms. Yuck!!!
I've never seen them, or at least noticed them, in our cod. Perhaps it's because it's commercially frozen prior to purchasing it.

After reading the article in the link below, I'm wondering if it is more prevalent in the UK than in Alaska?
