Question No cook meals for Summer heat?

With these days in the upper 90's - heat indexes 110 or higher, I'm trying to think of ways to cut back
on any foods that have to be cooked, yet are still healthy.
So far, I have salads, crackers & cheese, crackers & sardines, cottage cheese & fresh fruit.
I could also hard-boil a bunch of eggs - 0n;y a few minutes of heat. I did buy a container of crab salad
to eat w/lettuce/spinach & a fresh tomato.
Yes, I know there are all kinds of sandwiches but being diabetic I don't eat breads.
Any other suggestions, anyone. It looks like the rest of July & probably August are going to be
the same as presently.

We just had a similar meal last night...FinnCrisp crackers with gouda cheese, tuna, sliced kiwis, tomatoes, cottage cheese, pepperoncini. Here's a site with a few possibilities, maybe you can substitute the bread with crackers...https://newhope360.com/recipes/no-cook-dinners

PS: Sometimes we'll just have bagels with lox (smoked salmon) and cream cheese for a light supper. You would probably have to replace the bagel with something healthier.
