Here's a listing of apples rated from sweet to tart, one being the sweetest.

11. Pink Lady
12. Granny Smith

Haven't tried them all, but we like tart over sweet and usually buy the small dark green Granny Smiths.

Also like the Braeburns, if they're more green than red and have to be hard and firm, they seem to be a combo of sweet and tart.

Tried some Pink Ladys after seeing this list and they have a great unique mild tart and uniform flavor.

Honey Crisp is fairly new, within last few years. So it is a little more expensive than others.

I like early Golden Delicious, while they are still crisp. I don't care for the Delicious variety, as I don't like the mealy meat. I prefer crisp. In California, I had 12 apple trees, mostly McIntosh. Apples are high maintenance to keep the coddling moths out. Volker's oil had to be used early, while the trees were in bloom. Otherwise, malathion seemed to be the professional orchards' choice.

Except for Granny Smith, which is definitely tart, I don't think of apples in terms of sweet vs tart but in terms of flavor and texture. I like the ones that are a mixture of sweet and tart with a lot of flavor. I agree with jfh, nothing worse than a mealy-textured apple, yuck. But I think Fugi is too crisp, so I don't like those too much either.

It's nice to have your own apple trees or have orchards nearby. We had orchards nearby growing up and nothing compares to a fresh apple. And you can get non-commercial varieties which are often really superior.

I kept hearing about Cox's Orange Pippins from the UK and I finally got to try one. We got a shipment at our farmer's market here in the U.S. They were mostly overripe but I managed to try one that wasn't and they really do have an excellent flavor so I wish we had them here.

I like any of them that make great baked apples or a super apple Pie!
Nothing worse than a mealy apple! YUCK!
