Smile Veggie Fritters

From; free paleo recipes


Vege Fritters


Ingredients:

2/3 cup sweet potato, grated

½ cup carrot, grated

½ cup zucchini, grated and squeezed

½ cup green peas

½ cup almond meal *(I used sliced almonds smashed w/a rolling pin)

2 eggs *(I used 1 egg and 2 tbls of egg whites)

Salt and Pepper *(didn't add salt)

Coconut oil



Instructions:

Combine all ingredients except for the coconut oil together in a mixing bowl.

Heat frying pan on medium heat and add some coconut oil. Make patties the size of your palm and place 2 or 3 patties in the frying pan, cook on each side for 3-4min, or until browned and cooked inside.

*(I added a tbls of coconut oil to the recipe as well.)

Very interesting. I'm scared of so many veggies with the eggs, but who knows, might be a hot new thing for me!

That looks a very nice vegetable fritters recipe. Thanks. It makes a great breakfast or for morning tea. Do you go with any sauce? I think I'll eat them with chili sauce.

Hi Cookie, I tried the vegetable fritters this morning. I don't have the sweet potatoes and the peas so I add in flour and green beans. I add chicken stock granules and soya sauce for added flavour. I used 2 eggs but I think one egg is enough. I think a little ground pepper would make it nicer too. Anyway, my husband likes them very much. It's also a healthy fritter.
