Default Measureable Differences Btw Fresh Produce and Produce Sitting on Shelves?

Are there any measurable differences btw a fruit or vegetable picked right off the living plant and one sitting on a shelf in produce section of the store?

I hear about this living force you get from fresh plants, but I don't know what that means. I'm not saying I don't believe it, I just want to know what it is. Are there more enzymes or something in a freshly picked piece of fruit or vegetable?

I normally play Agent Scully (X Files) on this. As soon as you pick a fruit or vegetable, death (decay) begins. No life force. Just life loss. Fresh frozen seems to be the quickest method to stop the decay.

Absolutely there's a difference. Biophotons begin to diminish from the instant veggies & fruits are picked so whenever you can pick yer own, it's sooo worth it. Then there's the issues of shipping, cold storage for extended amounts of time which causes significant losses in its food energy & nutrients.

Enzymes in fresh produce are intact when eaten raw. The enzymes are destroyed when cooked at temperatures over 50 degrees I believe.

I'm gonna try sprouting now. It says you don't need soil. Where does the sprout get all the nutrients from without soil?

Also, after you have a sprout, do you eat just the sprout? Or the initial seed and sprout? Or the root, seed and sprout?

The seed are high energy sources which nourish the sprout.

Don't forget, you don't know haw long the fruit - veg has been off the tree.

There are also more nutrients in organic produce. I signed up for a vegetable share to get local organic produce and I'm thrilled. Last week was the first week and we got 2 types of lettuces, radishes, carrots and two quarts of strawberries. Such delicious difference to get such fresh healthy food, though I imagine some people wouldn't be ready for the strong 'green' taste in really fresh organic produce since the stuff in the grocery store is so bland. I can hardly wait to see what's in this week's share. Who would have thought I could be so excited about vegetables but that's what our society has come to--getting really healthy food is a thrill.

Also I read a funny article lately--they found that produce in the front that gets more florescent light has more vitamins! They tested spinach and even in a plastic package the first package had more vitamins.

I try to buy stuff with roots still attached and then soak it in water when I get home (also to clean it of course) to see if it is still in a live state and will continue in that state a little longer.

This time of year there should be more farmer's markets opening soon if not already available.
Mine opened last week. Ask each farmer when his items were picked.
Usually it was that very morning.
You can't get much fresher than that!

Alot of the farmer's markets around here (south Houston area) don't seem that great. Most of their produce does not say organic. they don't even seem to be from farms. we'll see. I haven't been this new season.

That's the same of farmer's markets in central TX. Even though this is the HQ of Whole Foods, the organic choices are not a large variety. There is one organic farmer that is close to me and only sells on Saturday morning. That's not convenient. I wish I could find something local like u&iraok has found.

You can try www.localharvest.org/csa/ to find a farmer near you. It's Community Supported Agriculture. It looks like there are quite a few in Houston, but not too many in Central TX. You put in your zip code. It's really catching on so hopefully you can find a CSA near you.

It is expensive and you have to pick it up each week at the same day and time. Our pickup is about 20 minutes away and we only have an hour window but others will have several hours window. (We also get raw milk and eggs.) It usually runs about $300-$400 for about 20 shares or 20 weeks, paid ahead of time in 1 or 2 installments. Mine works out to about $21 a week for enough vegetables and a few fruits for almost a week for 2 people. This week we got a quart of strawberries, 2 heads of lettuce, kale, pac choi and fennel. I made a stir fry out of the kale, pac choi and fennel (delicious!) which lasted two meals and the two head of lettuce lasted a week, having a salad every day.
